Egg-in-the-Hole Breakfast Bagel

Egg-in-the-Hole Breakfast Bagel

A delicious spin on the morning breakfast bap, using a New York style bagel or just a hollowed fresh baked flat bun.

5 min prep time | 8-12 min cook time | Serves 1

Ingredients:
-low calorie cooking spray
-2 bacon rashers
-1 mushroom sliced
-1 large egg
-1 bagel / ring bun
-Spinach
-Cherry tomatoes
-Salt & pepper to taste

Method:

  1. Spray a large frying pan with cooking spray over a medium heat.
  2. Place the bacon and mushroom around the edge of the pan.
  3. Separate the egg and pour the egg white into the centre of the pan and place the top half of the bagel on top.
  4. Pour the egg yolk into the centre of the bun hole and after a couple of minutes, flip the bacon and mushrooms.
  5. When the egg is done to your liking take the pan off the heat.
  6. Assemble the bagel using the bottom bun for the spinach, mushroom, bacon and tomatoes and top with the fried egg bun.
  7. Season with salt and pepper and serve.
